Red earth, slow roasts
Tambdi mati means red earth in Konkani, the laterite that colours every road and wall in North Goa. We roast in an old Portuguese-era house on that earth in Assagao, twelve kilos at a time, on a drum roaster we rebuilt ourselves.
The green coffee comes straight from estates we visit in Chikmagalur, Coorg and on the Malabar coast. We roast on Mondays and Thursdays and pack every bag by hand, so what reaches you was roasted a day or two before.
