Arabica from the Western Ghats, left open to the monsoon winds in warehouses on the Malabar coast for twelve weeks until the beans swell and turn pale gold. The old sailing-ship coffee, made on purpose. We roast it medium-dark for a heavy, syrupy cup that stands up to milk and to a stovetop moka pot.
